Basmati Rice with Vegetables
Ingredients
1 cup Basmati rice ("Zernovyta" brand) — approx. 6.7 oz / 190 g
Bell pepper — 7 oz / 200 g
Green peas (or any mixed vegetables) — 3.5 oz / 100 g
1 onion
1 carrot
1 garlic clove
Olive oil (for sautéing)
Salt, black pepper, hot pepper — to taste
Fresh herbs — to tast
Cooking:
Thinly slice the onion and carrot, then sauté them in olive oil over medium heat.
Cook the Basmati rice according to the package instructions.
Add chopped bell pepper and green peas (or vegetable mix) to the pan with the onions and carrots. Sauté for about 5 minutes.
Add the minced garlic, salt, black pepper, and hot pepper. Cook for 1 more minute.
Add the cooked rice, stir everything together, and remove from heat.
Optionally, sprinkle with freshly chopped herbs before serving.
