Pumpkin-Orange Semolina Cake

Ingredients

300 g pumpkin

1 cup kefir

1.5 cups semolina (e.g. Zernovyta brand)

1 tsp baking soda

1 orange

1 cup sugar (for the batter)

3 tablespoons sugar (for the syrup)

50 ml water

Fresh mint – for decoration

Cooking:

Grate the pumpkin. Add orange zest, kefir, sugar, baking soda, and semolina. Mix well and let the batter rest for 20 minutes.

Grease a baking dish with butter and sprinkle with a bit of semolina. Pour in the batter and bake for 35 minutes at 180°C (350°F).

While the cake is baking, prepare the syrup by mixing the juice of the orange with 3 tablespoons of sugar and 50 ml of water. Simmer for 5 minutes.

Once the cake is baked, pour the hot syrup over it. Let it cool and decorate with mint leaves.
