Chicken Cutlets with Zucchini and Rice
Ingredients
1.1 lb chicken fillet (500 g)
1 zucchini
0.22 lb round rice (Zernovita) (100 g)
1 carrot
1 onion
1 egg
1 bunch of herbs (parsley, dill, etc.)
Salt and pepper – to taste
Whole wheat flour – for breading (optional)
Cooking:
Grind the chicken fillet into minced meat. Also, grind the carrot and onion using a meat grinder or blender.
Grate the zucchini on a coarse grater and squeeze out the excess juice by hand.
Combine the minced meat, onion, carrot, and zucchini, then add the previously cooked and softened rice.
Finely chop the herbs and add them to the mixture, along with the egg. Season with salt and pepper.
Mix everything thoroughly, form the cutlets, and optionally bread them in whole wheat flour. Fry the cutlets in a small amount of oil until golden brown on both sides.
