Carrot Cake with Bananas and Spices
Ingredients
2 eggs
2 cups oat flour (or ground oat flakes "Porridge Oats" by Zernovita)
2 bananas
2 carrots
0.25 cup dried fruits (raisins, prunes, etc.)
4 tbsp natural yogurt
3 tbsp olive oil
2 tsp baking powder
Ground cinnamon, nutmeg, and ginger to taste
Cooking:
Preheat the oven to 180°C (350°F).
Blend the bananas in a blender, then add the eggs, olive oil, and whisk until smooth.
Grate the carrots on a fine grater and add them to the batter along with the chopped dried fruits.
Add the dry ingredients (flour, baking powder, and spices), previously mixed together. Stir well.
Lightly grease the baking pan with oil and pour the batter in.
Bake for about 40 minutes or until fully cooked.
Optionally, serve the cake with cream by whipping low-fat cottage cheese with natural yogurt and spreading it over the cooled cake.
