Chocolate Lemon Pie
Ingredients
1 egg
50 g sugar
70 g butter
20 g cocoa powder
30 g almonds
100-150 g flour
For the filling:
4 eggs
1 egg yolk
150 g sugar
150 ml heavy cream (33-35% fat)
2 lemons
A little chocolate (for garnish)
Cooking:
Prepare the dough:
Beat the egg with sugar, then add the butter and mix well.
Blend the almonds in a food processor and add them to the mixture.
Add cocoa powder, mix, then add flour and knead the dough.
Prepare the crust:
Grease a baking pan with oil and press the dough into the pan, creating an even layer and making borders around the edges.
Cover with plastic wrap and refrigerate for 30 minutes.
Bake the crust:
Remove the plastic wrap, then place parchment paper over the dough.
Add beans or peas on top to prevent the dough from rising and help it bake evenly.
Bake in a preheated oven at 180°C (350°F) for 15 minutes.
Prepare the filling:
Grate the lemon peel and squeeze out the juice (you will need 100 ml of juice).
Beat the eggs and yolk with sugar, then add the cream.
Mix in the lemon zest and juice.
Assemble the pie:
Remove the paper and beans from the crust.
Pour the lemon filling onto the crust.
Bake for another 45 minutes until the filling sets.
Finish:
Once the pie cools, sprinkle it with grated chocolate for garnish.
