Classic Tagliolini egg pasta. Thin long strips of vermicelli 1.5 mm wide are rolled into oval nests. Made according to the author's recipe from durum wheat pasta and liquid egg mass.

The strips of vermicelli are extruded through bronze, which creates small scratches on the surface of the dough during the process of forming it, which increases its porosity. Therefore, the finished pasta absorbs sauces better, which makes it taste unsurpassed.
