Semolina-Coconut Casserole with Cherries
Ingredients
3 eggs
0.22 lb sugar (100 g)
4 tbsp sour cream
3 tbsp semolina
2 tbsp shredded coconut
0.66 lb cherries (fresh or frozen) (300 g)
1 tsp baking powder
Vanillin to taste
Powdered sugar for dusting
Cooking:
Remove the pits from the cherries and place them in a strainer to drain the juice.
Beat the eggs with the sugar and vanillin. Add the sour cream, semolina, baking powder, and shredded coconut. Mix well. Let it sit for 15 minutes to allow the semolina to soften.
Grease a baking dish with butter and pour in the batter. Evenly distribute the cherries on top.
Bake in a preheated oven at 190°C (375°F) for about 30 minutes.
Before serving, dust with powdered sugar and shredded coconut. Optionally, you can sprinkle the top with grated chocolate.
Serve drizzled with liquid honey or condensed milk.
