Homemade Processed Cheese with Mushrooms

Ingredients

500 g of cottage cheese

2 eggs

3 tablespoons of sour cream

200 g of mushrooms (champignons)

0.5 teaspoon of baking soda

Parsley or dill

Salt

Cooking:

Mix all the ingredients, except the mushrooms, and blend them in a blender.

Pour the mixture into a pot and place it over a water bath for 15 minutes, stirring constantly.

Once the mixture cools down, blend it again in a blender.

Clean, wash, and finely chop the mushrooms. Sauté them in oil until done, adding salt and pepper to taste.

Add the mushrooms and chopped herbs to the cheese mixture, then transfer everything to a glass jar and refrigerate for a few hours.
