Tomato Soup with Rice and Meatballs

Ingredients

500 g ground meat

700 g tomatoes

150 g rice

100 g onion

4 garlic cloves

3 tbsp breadcrumbs

Salt, pepper, fresh herbs to taste

 

Cooking:

Add breadcrumbs to the ground meat, season with salt and pepper, and mix well.

Peel the tomatoes and blend them in a blender.

Finely chop the onion.

In a pot, pour in 2.5 liters of water and bring to a boil.

Add the long-grain rice (Zernovita) to the boiling water.

Once the rice boils, add the meatballs and cook for another 5 minutes.

Add the blended tomatoes, sautéed onion (or raw if preferred), and season with salt and pepper. Cook until ready.

Remove the pot from the heat and add the crushed garlic. Let the soup steep for 30 minutes.

Garnish with fresh herbs when serving.
