Whole wheat flour is made from unpeeled grains that are ground together with the flower coat and grain germ, and then not sifted. That is, all the components of the grain are used for food and, despite the somewhat coarse nature of the resulting product, it is called wallpaper flour, or single-grain flour, and is considered an incredibly healthy product.

Compared to varietal flour, wholemeal flour has a richer chemical composition, which is why its benefits are rated higher. It contains trace elements such as potassium, magnesium, calcium, phosphorus, sodium, iodine, copper, zinc, iron, as well as vitamins such as P, PP, E, H, A, B vitamins and beta-carotene.
