Rye flour is a bakery flour made from rye and is the second most widely used type of flour in Ukraine after wheat flour. Rye flour has a grayish-white or grayish-cream color and is heterogeneous in size with a hulling particle content of up to 15%.
Due to the fact that it is difficult to separate the germ and bran from the rye endosperm in the production of rye flour, rye flour tends to retain a large amount of nutrients, unlike refined wheat flour.
