Coarse corn flour is considered to be more valuable and nutritious than medium and fine corn flour. Dishes made from it are stored much longer, due to its ability to inhibit the fermentation of carbohydrates. It has a sweetish flavor and a cheerful yellow color.
The nutritional value of corn flour is much lower than that of wheat or rye flour, but it does not contain gluten.
